    This is my 3rd attempt at making a comment.. I am very excited by your kindness in wanting to share with those who are just starting.. I was in Sweden with my son last week and we made Cumberland sausages which were quite the best I've eaten in years.. He just used good cuts of bacon which he minced and added some very basic spices....
    I found cowgirl's site first and found yours through hers... I would love to make some smoking facility but couldn't make one like hers as the city planners would be on my case instantly (Cork City)
    I am just about to purchase a commercial mincer with sausage making attachments. I have a tiny meths smoker which was great with mackerel last year... I hope to have plenty of fish when the boat gets in the water...

  2. Hi John, please accept my apologies for the delay in getting back to you. I have had a trial run with my smoker which didnt work terribly well but i am going to make some adjustments the book i was using as a guide is nt great (the Smoking and Curing Book by Paul Peacock) as it gives only a very basic design. However i would recommend having a look at Darina Allens Forgotten Skills (new book) as it gives good detail. Unfortunately it will be another few weeks before i get to test my smoker again but will put some pictures sometime in the next couple of days. I have to find out how i can get an email sent to me notifying me when someone leaves a comment - i am new to this blogging game... (cowgirl is awesome isn't she!)

  3. Hi Max, Thanks for getting back to me.
    Blogging is a mystery to me but I have taken delivery of a good mincer, have spoken to my Butcher, who I give the odd ticket for a Munster game to, and he will give me Pork loin for my first attempt on Tuesday. I am toying with the idea of putting a new wood stove in my extended bedroom and maybe making a smoke room on the outside wall.. I was in Spain in the late 60s and visited a house where they had a smoke room as part of the chimney... A tiny steel door on the landing leading to a treasure house of goodies...
    I'll read this again tomorrow and seek the book(s) you recommend... I'm hoping to launch the boat soon and have made friends with a master fisherman (and bought all his boat fishing gear) who will be showing me where the fish are!!
